Did you know that December 24 is National Eggnog Day?  I’ve been making eggnog ever since I was 7 years old but I always used the premade cartons and added a few extra ingredients to jazz it up.  Now that I’m much more conscience about what I put in my body, when I looked at the ingredients on those premade eggnog cartons, I knew I had to make my own dairy free paleo eggnog.  Now I can enjoy a cleaned up version of my favorite holiday drink without all the toxic ingredients.  You know what, this homemade version even tastes better!

What You’ll Need

  • Full fat coconut milk
  • Eggs
  • Cinnamon
  • Cloves
  • Nutmeg
  • Maple Syrup
  • Vanilla
  • Kahlua
  • Ice cream

How to Make this Dairy Free Paleo Eggnog

This is super easy but you do have to make in advance of serving.  That’s the only downfall.

Put the coconut milk in the saucepan and gently heat.

While the coconut milk is heating, put all other ingredients in the blender and mix up.  Gently and slowly pour the hot coconut milk into the blender (while the blender is on).  You don’t want to pour it all in at once and scramble the eggs.  The hot coconut milk will slowly cook the eggs.  Blend for 2 minutes after all the milk is in the blender.  Make sure vent the blender so the steam can escape.

Set in fridge to cool.  You can stop here and serve this yummy eggnog as is or you can keep reading to make a boozy eggnog milkshake.

Make It Boozy

This is how I learned how to make eggnog!  Pour the eggnog mixture back into the blender and add 2 scoops of dairy free ice cream (I use THIS one) and a few shots of Kahlua and blend.

Pour into serving glasses and top with a dash of cinnamon and nutmeg and enjoy!

Ingredients

  • 4 cups Full Fat Coconut Milk Heated
  • 4 Egg Yolks
  • 3 T Maple Syrup
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 1/8 tsp Cloves
  • Pinch Sea Salt

Make it Boozy

  • 2 scoops Dairy Free Ice Cream
  • 2 shots Kahlua

Instructions

  1. Heat the coconut milk in a sauce pan

  2. While the milk is heating up, blend all the other ingredients in a blender

  3. Slowly pour the heated coconut milk into the blender while it is blending the other ingredients. You don't want to cook the egg by just pouring hot milk into a blender that isn't blending.

  4. Store in the fridge until you are ready to serve

Make it Boozy

  1. After the eggnog cools in the fridge, pour back into the blender and add the ice cream and Kahlua. Blend and enjoy!
