My mom is visiting from Oklahoma.  She usually comes out before Thanksgiving and stays with me through Christmas.  We have a great time while she’s here.  I host Friendsgiving at my house every year.  Then every weekend after Thanksgiving there is either Christmas parties or shopping and then boom, Christmas is here and gone and it’s time for her to go back to Oklahoma before I know it.

It’s officially cold and flu season and my mom, who is almost never sick, has a cold.  The only thing she ever requests when she is sick is my chicken noodle soup.  Mom story: I took her to the drug store to get some medicine and nose spray yesterday.  She’s so spastic when using nose spray.  We were sitting in the car and she tried to use the spray but when she squeezed the bottle she threw her head back and sprayed the medicine all over her glasses and face.  Haha!  I wish I had a video.  I’ve never seen anything like it!  This isn’t the first time she has struggled with nose spray though.

I call my mom everyday on my way home from work.  This one particular day I called her and she sounded defeated.  I asked what was wrong and she proceeded to tell me why.  Her allergies were bothering her so she went to the store and bought some no-drip nose spray.  She said I sprayed and sprayed and it’s just running down my arm.  The part that almost made me wreck was when she said, I bought the no drip kind, damn it!  The problem was that she took the lock off but didn’t take the cap off the spray.  So every time she sprayed, it hit the cap and ran down her arm.  Bless her heart!

When I’m sick, I always feel better by simply making this soup.  You know when you are sick and you can’t taste anything?  Not with my chicken noodle soup.  It’s chock full of flavor and antioxidants to help you fight off the nasty cold virus in a hurry.  The next time you are feeling sick, make this soup and you’ll be feeling better before you know it!

Mom’s Favorite Chicken Noodle Soup

Ingredients

  • 1 box gluten free pasta
  • 2 T olive oil
  • 1 yellow onion
  • 4 carrots
  • 4 ribs celery
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • Pinch of red pepper flakes
  • Pinch of black pepper
  • Pinch of white pepper
  • 2 tsp salt
  • 1 32 oz box of chicken stock
  • 1 large chicken breast cubed
  • Fresh dill

Instructions

  1. Cook the pasta in a separate pot.  I use this pasta.

  2. In a large soup pot, cook the onion in the olive oil until the onion is translucent
  3. Add in the carrots and celery and sauté until the veggies begin to soften, about 5 minutes
  4. Sprinkle in the garlic powder, ground ginger, red pepper flakes, pepper and salt
  5. Stir everything together and let it cook about 1 minute
  6. Pour in the chicken stock and scrape the brown bits off the bottom of the pot. There is a lot of flavor in those brown bits!
  7. Bring the soup to a boil and add in the chicken.
  8. Simmer the soup for 10 minutes
  9. While the soup is simmering, drain the pasta

Recipe Notes

I serve the soup in a bowl by adding the pasta (I use this one) to the bottom of the bowl, ladle in the soup and top with fresh dill.
