Peanut Butter, Chocolate Chips and Bananas are the trifecta of foods, in my humble honest opinion.  I eat peanut butter by the spoonful as a snack and sometimes I throw in a few chocolate chips but my favorite is spreading peanut butter on a banana and topping with chocolate chips.  I’m not alone here, am I?  If you haven’t tried it, you should.  It’s heaven!

My baklava oatmeal bake is the most popular recipe on the blog.  So, I thought why not take the trifecta and create another oatmeal bake!

Oatmeal bakes are so easy! Mix everything together in a bowl, pour it in a pan and 45 minutes later, you’re eating! They are great for breakfast or even a snack.

A few notes about this recipe.  I use unsalted peanut butter so if you use regular salted peanut butter, you might start with only 1/2 tsp of salt in the recipe.  I also use dairy free chocolate chips.  You can find them at your local grocery store or on Amazon by clicking HERE.

Ingredients

  • 1 banana mashed
  • 1 T coconut oil melted
  • 2 eggs
  • ½ cup peanut butter
  • 2 tsp vanilla
  • 3/4 cup almond milk
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 cups oats
  • 1/3 cup chocolate chips

Instructions

  1. In a mixing bowl, mash the banana and add the melted coconut oil, eggs, peanut butter, vanilla, almond milk, baking powder and salt. Whisk together until smooth. Stir in the oats and chocolate chips. Pour mixture into an 8x8 baking dish and bake for 45 minutes at 375.
