Do you ever find yourself in a situation where you need to get dinner on the table but you don’t have any meat thawed out?  Then, this salsa chicken is going to be your go-to, quick and easy dinner!

What You’ll Need

  • Chicken
  • Salsa
  • Instant Pot

Do you have an Instant Pot?  If not, what are you waiting for?  The Instant Pot can replace so many appliances in your home.  Not only is it a quick cooking pressure cooker, it can be used as a slow cooker, rice cooker, steamer, yogurt maker and so much more!  I’ve had mine since the Instant Pot first came about but they have made a lot of upgrades since then.

How to Make Salsa Chicken

Pull the chicken out of the freezer and add it to the Instant Pot with a jar of your favorite salsa.  Cover and set manual setting to high pressure for 15 minutes.

After 15 minutes, manually release the pressure on the Instant Pot.  The chicken should fall apart.

Remove the chicken, add a little bit of the salsa and shred.  There are several ways to shred the chicken.  You can 1) do it with a two forks (very manual and can be time consuming), 2) use a hand mixer or 3) use a stand mixer like I did below.  You have shredded chicken in seconds.

This chicken salsa can be served so many ways. You can make tacos, wraps, salads or bowls.  The whole family can have a different meal with this one simple recipe.

Ingredients

  • 1 lb Chicken breast can be frozen
  • 1 jar Salsa pick your favorite

Instructions

  1. Add 1 jar of salsa and chicken to the Instant Pot

  2. Set Instant Pot to manual high pressure for 15 minutes

  3. Release pressure

  4. Pull chicken out of Instant Pot and shred

  5. I shred mine with a stand mixer or you can also you a hand mixer (see video)
