It’s officially fall which means sweet potatoes are plentiful!  My Sweet Potato Sloppy Joe’s are gluten free, dairy free, paleo and Whole30!

These stuffed sweet potatoes remind me of sloppy joe night growing up and I don’t even miss the bun!  Even if you aren’t trying to be gluten free, you will LOVE this recipe!  If you want to serve it on a gluten free bun or even a wheat bun along side some sweet potato fries, go for it!  You do what makes you happy and healthy in your kitchen.

Sweet Potato Sloppy Joe's

Ingredients

  • 4 Sweet Potatoes
  • 1 lb Grass Fed Ground Beef
  • 2 T Olive Oil
  • 2 tsp Iodized Salt
  • 1 small Yellow Onion
  • 1 Bell Pepper
  • 1 tsp Ground Garlic
  • 8 oz Tomato Sauce
  • 3 T Tomato Paste I use the one in a tube
  • 2 T Balsamic Vinegar
  • 1/2 tsp Crushed Red Pepper Flakes

Instructions

  1. Roast the sweet potatoes at 350 degrees for one hour

  2. While the potatoes are cooking, brown the ground beef in olive oil and 1 tsp of iodized salt

  3. Remove the ground beef from the pan but leave the remaining fat and cook the onions and peppers until they are soft

  4. Add the beef back to the pan along with the remaining ingredients and simmer for 10 minutes

  5. Stuff the potatoes with the meat mixture and enjoy!
