I made these marshmallows in early 2022 but I never took the time to put them on the blog.  I was recently discussing beef gelatin marshmallows with some friends at the farmer’s market and it reminded me that I never put this marshmallow recipe out in the world.  So, here I am, almost two years later, finally giving you my paleo marshmallow recipe.

These marshmallows are so easy to make, they taste great and they pair great with my heart healthy hot chocolate.  Bonus, they are paleo, which means they are made with real whole food ingredients.  I just looked up the ingredients in store bought marshmallows.  They have blue dye in them and words I can’t even pronounce.  No thank you!

What You’ll Need

  • Egg white
  • Grass-fed beef gelatin
  • Honey
  • Maple Syrup
  • Vanilla

How to Make these Paleo Marshmallows

hot chocolateGet out your big stand mixer.  If you don’t have a stand mixer a hand mixer will work but your arm may get tired.

In the stand mixer, slightly whip up the egg white.  You don’t want stiff peaks yet, just until it’s frothy.

In a small bowl, mix 1/2 cup water and 3 tablespoons of beef gelatin and allow the gelatin to bloom.  I use Perfect Supplements beef gelatin.  It comes from 100% grass-fed cows.  If you would like to try Perfect Supplements gelatin, you can use code FERRA10 at checkout.  Check out Perfect Supplements products HERE.

In a sauce pan add the remaining 1/2 cup water, 1/2 cup honey and 1/2 cup maple syrup.  Bring to a boil, reduce the heat and simmer for 5 minutes.

Add gelatin to the egg white in the stand mixer.  Turn on stand mixer and gently stream the hot syrup water over the gelatin.

Add in the vanilla and salt.  Mix on high for 8-12 minutes until you have marshmallow fluff.

Pour the marshmallows into a parchment lined baking dish and allow them to cool before cutting them into big squares.  This could take 4-6 hours or even over-night on the counter.

When you are ready to cut them, if they are too sticky to handle, you can sprinkle tapioca powder on them.

I enjoy topping off my hot chocolate with these marshmallows.

  • 1/4 cup Tapioca Flour (optional)

Instructions

  1. In a stand mixer, whip the egg white

  2. In a small bowl, mix 1/2 cup water and 3 T beef gelatin and allow to bloom

  3. In a sauce pan, add the remaining 1/2 cup water, 1/2 cup honey and 1/2 cup maple syrup. Bring to a boil and then reduce to a simmer for 5 minutes.

  4. Add bloomed gelatin to the stand mixer with the whipped egg white. Turn on the stand mixer and slowly stream the hot syrup mixture into the gelatin mixture.

  5. Add in the vanilla and salt

  6. Mix on high for 8-12 minutes until you have marshmallow fluff

  7. Pour the marshmallows into a parchment lined pan. Allow to cool for 4-6 hours or even over-night.

  8. Cut the marshmallows into big squares and enjoy!

  9. If the marshmallows are too sticky, you can sprinkle tapioca flour on them to make them easier to handle.
